Ingredients
- 1 Red Onion finely diced
- 1 punnet Cherry Tomatoes
- 1 Chilli, seeded and chopped
- 1 Avocado, diced
- 1 small handful fresh Coriander
- Squeeze of Lemon juice
- Splash of Olive Oil
- 1 tsp Sugar
- Salt and Black Pepper
Directions
- Chop all ingredients into small blocks and combine in a bowl.
- Pick the coriander leaves off the stalks and add to the bowl.
- Add a good squeeze of lemon juice, a generous splash of olive oil and season with the sugar, salt and black pepper to taste.
